Greek calabrian cookery workshop

The traditional cuisine of the Grecanica area derives directly from the pastoral and peasant culture and as such reflects the environmental constraints of this harsh land, with its contrasting mountain and sea views, and the historical influences of Magna Graecia. The local Calabrian dishes are simple, poor and flavoured with the 'strong' and genuine flavours of a long peasant tradition and change according to the season and what the land generously offers.

Kalos Experience, with its Creco-Calabrian cooking workshop, intends to offer a course to bring those interested closer to the ancient flavours of Greek Calabria through the preparation of those typical dishes that use poor and common ingredients of Greek Calabria and that can therefore also be reproduced at home with a few tricks:

- i maccaruni, homemade pasta shaped around cannìci (thin sticks of a herb), seasoned with a sauce made from pieces of goat or pork meat cooked in tomato sauce (which are then separated and eaten as a second course) and sprinkled with salted ricotta;
- i tagghiarini cu li ciciri, homemade pasta accompanied by chickpeas flavoured with bay leaves
- pruppetti di ricotta cooked in tomato sauce and flavoured with pecorino cheese;
- excellent to serve as an appetiser or aperitif are lestopitte (pitte veloci) unleavened pastry fried in olive oil, and zippole (zippole) leavened stringy pastry sometimes twisted together with a piece of anchovy, stretched and always fried in olive oil.

An expert in traditional cuisine will accompany the participants in their search for typical flavours and ingredients to get to know the food and wine world of the Greeks of Calabria. He will make them cook, test dishes, compare flavours and combinations so that in five days they will become true connoisseurs of the Greek cuisine of Calabria.

Palm Sunday

On Palm Sunday, during the procession, you may encounter 'sculptures' of woven olive leaves adorned with flowers and first fruits, carried by adults and children, and wonder what they are and who made them.

This is because in Bova every year on Palm Sunday (March or April, depending on when Holy Easter falls) an ancient rite is celebrated in a procession of large and small puppets made of olive leaves woven on reeds. The preparation of the rite takes place in the weeks beforehand by the inhabitants who join together in spontaneous workshops to build these particular 'sculptures,' which depict women (mothers and daughters) and are adorned with wild flowers and first fruits. The 'Pupazze' or 'Palme di Bova' are made from olive leaves that the entire community (men, women and children) gathers, divides two by two and then weaves with great skill and patience around a reed board. Once the structures, which resemble a female body, are finished, the evening before Palm Sunday, they are adorned with flowers, fruit, ribbons and lace.

On the day of the feast, after the blessing, the blessed palms are carried in procession through the streets of the village and after the mass, some are disassembled, to give the blessed steddhi to those present; the 'steddhi' (i.e. the parts that make them up) are distributed among the people who keep them up in the fields and in their homes, as is common for people to keep the blessed olive branch.  Opinions on the origins of this ritual differ. There are those who claim that the origin is rooted as far back as prehistoric times, when populations used propitiatory rites to evoke the Mana (Greek name for mother earth) for their crops and the fertility of the land. There are also those who claim that the ritual derives from the myth of Persephone, traces of which are often found in local history and archaeology (the young girl Persephone abducted by Zeus is said to have spent six months in the Underworld and in the following six months returned to Earth to her mother Demeter, and that her return to Earth coincided with the beginning of spring. This is why the Palms of Bova are said to be adorned with flowers and first fruits to commemorate Persephone's ascent from the underworld and the beginning of Spring. In this meaning, the large palms would symbolise Demeter and the small ones Persephone), and those who trace it back to Lent in the Byzantine tradition. The fact is that it is an ancestral tradition, a cultural syncretism that the faithful renew every year, carrying "pupazze", human-sized anthropomorphic statues with the features of a woman, in procession to the sanctuary of San Leo.

Kalos Experience helps you understand this ancient tradition, which has nothing to do with the festivities of post-modern Calabria, and which instead keeps the devotion of the faithful alive, praising rurality and relying on the most beautiful ornaments in nature: flowers and fruit.

The guest will discover an enchanted village, where the sweet melodies of the municipal band drift through the little stone houses, and the Palms of Bova, wending their way through the narrow streets in the village give new colour to streets somewhat faded by time.

The scent of Bergamot

With this offer, Kalos Experience intends to propose a trip to Calabria Greca amidst the colours and scents of the Bergamot to bring those interested closer to the unique places where this precious citrus fruit grows. following the ancient paths, which lead to the fiumare, the ideal places for cultivation, immersed in the enchanted landscapes of Calabria Greca.

The fruit is spherical in shape with an average weight of around 200 grams and the colour when ripe is yellow. Its most suitable and exclusive habitat is the thin strip of land, just over a hundred kilometres long, between the extreme foothills of Aspromonte and the Ionian and Tyrrhenian Seas, in the province of Reggio Calabria. The fruit with an essence (called 'green gold') useful as a fixative in cosmetics, grows only in this coastal and hilly strip of land in the province of Reggio Calabria, as it needs a special microclimate. It can also grow in other places, but as an ornamental plant because the fruits do not allow the essence to be obtained.

A use, not secondary, of the Bergamot is in gastronomy: in this field the whole fruit is used, for sweets but also for cooking fish. From the dried Bergamot peel, snuffboxes and ornamental objects are made, and from the juice, soft drinks and thirst-quenching concentrates.

Through the trip, the aim is to tell the story of bergamot, starting with knowledge of its cultivation and then to understand its use and processing techniques, and finally to get to know the products and taste them. Walks in the midst of nature but also journeys by car allow guests to visit agritourisms, small local factories, and farms that process this precious citrus fruit and perpetuate a centuries-old tradition.

From November to February, it is possible to participate in the harvest.
